2017 Sangiovese
This lovely Brunello style Sangiovese starts with cherry and vanilla on the nose, bold stone fruit and hint of pepper mid palate that settles into a velvety oak and berry finish.
Production notes
Picked at 24.5 brix then wild yeast is allowed to start fermentation for three days at which point we inoculate with BRL 97 yeast. We then ferment until our desired color is achieved. Punch down is twice a day taking care to not smash the seeds. Then this beautiful wine is transferred to French oak puncheons for a 4 year aging process and topping of every month with only Sangiovese. Then bottled for one year before release.
